The working of the pig has been a part of La Frasca , from the very beginnings. Each year we raise swine in order to serve fresh salami, sausages and cotechini, directly to our guests in La Frasca . Using our own personal recipe, the meat is worked in a traditional method, prepared and aged during the winter months. No color additives or preservatives are used at any stage in the production process. In addition to tasting our artisanal products in our restaurant, we also offer a selection that may be purchased whole or by weight.
