Ha un sorriso da ragazzino – anche se non lo è più – e si muove con garbo tra i clienti…La cucina, semplice e accattivante: recupera piatti del territorio in maniera pulita..Ma un piatto in particolare mi ha fatto sobbalzare: la minestra “cul maranzon”. Divina. Mi ha riportato molto indietro, alla trattoria che con mia mamma conducevo a Percoto…Ho ritrovato da Scarbolo quelle emozioni: di un piatto che i macellai ci negano in quanto quella parte del maiale la buttano perché non hanno il tempo di prepararla.”
